Spaghetti Bolognese
Be sure to use high quality canned Italian tomatoes!
Ingredients
- 2 lbs lean ground beef
- 1 Tbs olive oil
- 1 pinch salt
- 1 pinch pepper
- 1 med onion, chopped finely
- 1 bell pepper, chopped finely
- 1 carrot, chopped finely in food processor
- 1 cup sliced mushrooms
- 2 cloves garlic, chopped finely
- 1 2.25 oz can sliced black olives
- 2 28 oz cans Italian whole tomatoes
- 1 6 oz can tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried parsley
- 1/2 cup fresh basil
- 1/2 cup Merlot red wine
- 8 oz uncooked spaghetti
Directions
- Preheat large soup pot and add a drizzle of olive oil. Add ground meat, salt, and pepper, Brown meat.
- Add onion, bell pepper, carrots, mushrooms, and garlic. Cook until vegetables are tender.
- Add olives, canned tomatoes, tomato paste, herbs, and wine. Crush tomatoes with a potato masher or break up with a spoon.
- Bring to a boil, and then simmer for 30 minutes.
- Cook pasta and drain pasta. Serve sauce over the pasta.
